Waffle Salmon Cakes

Waffle Salmon Cakes are a simple and yummy, perfect for summer, on the light side, and are great for an app, lunch, or dinner. Only six ingredients, ready in about ten minutes from start to finish, and as tasty as they are nutritious. An alternative to traditional salmon cakes with no need for extra grease and a hot skillet.
Serve with some wilted greens for an extra boost. Shall we?
Waffle Salmon Cakes
Equipment
- 1 mini waffle iron
- 1 medium mixing bowl
- 1 mixing spoon
Ingredients
- 3 3oz Safe Catch Salmon or brand of preference
- tad bit of oil to coat iron with
- 1 lrg egg
- 1 tbsp real mayonnaise
- 1 tsp dijon mustard
- 1/4 cup chopped scallion
- 4 tbsp panko bread crumbs
Instructions
- Combine well.
- Add 1/4c to mini waffle iron and cook for 5 minutes [adjust if using full size unit].
- Drizzle with caper aioli if desired.
- Can be made ahead and reheated in the microwave.
Notes
I’m always looking for new ways to use my mini Dash iron. Waffle Salmon Cakes were another experiment that yielded success. If you don’t already have a unit, I HIGHLY recommend! I have no idea how often I would use it. Dash irons come in several shapes and colors, take up very little space, and only cost ~$10! Shopping information linked below.
