Hand Mixer Ube Ice Cream

Oh what a summer! A true scorcher, in Central Texas and around the globe. Ice cream is always a good choice, right? 😉 This Hand Mixer Ube Ice Cream is a game changer. Just a few ingredients, a short amount of time, and it’s time to cool down with a tasty, sweet treat! [Note: Any food flavor abstract can be substituted and/or other ingredients added to make a creation of your choice; e.g., see Smurf Blue Moon, Pumpkin Spice, and Apple Cinnamon, and Gingerbread ice creams below.]
I first came across ube (pronounced ooh-bae) during my time in Japan many years ago. Ube is a vibrant purple sweet potato (not to be confused with taro), that of course has an appealing color (we eat with our eyes!) and is simply delicious. It is a bit challenging to describe the flavor: mild, slightly sweet, malty, nutty, earthy.
Ube has been popular in the Philippines and other areas of Asia for thousands of years (there is no real documentation); however, it became more common in the Unites States less than a decade ago. New York’s Manila Social Club’s introduction of a $100 Ube donut covered with Cristal icing and 24-karat gold flakes in 2016 peeked people’s interest in purple desserts. How’s THIS for Insta-Famous?! In addition to being so yummy, Ube is also used in certain cultures to cure various ailments and is rich in vitamins and antioxidants.

Hand Mixer Ube Ice Cream
Equipment
- Electric hand mixer
- Large mixing bowl
- Teaspoon
- Rubber spatula
- 3 pint container with lid
- Plastic wrap
Ingredients
- 1 16 oz carton heavy whipping cream COLD
- 1 14 oz can sweetened condensed milk
- 1 tsp ube purple yam extract
- 1 tbsp vanilla extract OPTIONAL
Instructions
- Pour COLD heavy whipping cream in a large mixing bowl. Using hand mixer (with a whisk attachment if you have one) and beat on high until medium peaks form (about five minutes).
- Add sweetened condensed milk, ube extract, and vanilla (if desired; see note below*). GENTLY fold in until well combined. If you want a swirl look, fold until "marbled." CAUTION: Ube will stain...everything. NOTE: If you desire a darker purple color double the amount of ube extract. I tsp gives the ice cream a wonderful flavor. Also, the amount needed might vary depending on the concentration of the ube extract you have.
- Place in a 3 pint container and smooth the top. Place plastic wrap directly on top of mixture. Snap plastic lid on top.
- Put container in freezer and let set for at least 8 hours. If ice cream is too hard to scoop, allow to sit on counter for 15 minutes to soften.
- Keeps in refrigerator for up to one month. Be sure to place plastic wrap back on top on ice cream before returning to freezer.

There are so many simple ways to make different versions/flavors using this recipe. Get creative!
Smurf Blue Moon Marshmallow Ice Cream:
Follow all recipe steps; omit ube and vanilla extract. Add 20 drops of marshmallow extract and 15 to 20 drops of blue food coloring. The flavor will depend on what marshmallow extract you use. The one I used was custom made for me by the people at Bite Club. They make several amazing sweet and savory extracts, as well as jerky (even vegan!), spice blends, infused salts, and more!

Pumpkin Pie Spice Ice Cream:
Follow all recipe steps; omit ube and vanilla extract. Add pure pumpkin pie spice extract {to desired flavor] and drops of natural orange food coloring [to desired color is achieved]. Beer not included. Lol.

Apple Cinnamon Ice Cream:
Follow all recipe steps; omit ube and vanilla extract. Add pure cinnamon extract {to desired flavor], 1 cup of your favorite apple sauce, and drops of natural red food coloring [to desired color is achieved].
