Uncle Billy’s Brewery Canned Craft Cocktails

Uncle Billy’s Brewery and Smokehouse has been a Barton Springs staple for many years. They’ve been serving up good craft brews and food to the masses in the truly “Austin” bar, restaurant, and fantastic Fido friendly patio…with live music select days since 2006.


During my visit, of course I had to try a bit of Q: German sausage and fall off the bone tender pork rib with a side of mac & cheese. They scratch make the sauces if you feel so inclined….I’m not judging. Lol. It’s a Texas thang.
The smoked wings were off the charts good, and that’s saying a lot since I’ve been trying to find really good ones in ATX for the last 6 years. I even got ’em “naked,” so I could enjoy the natural flavors. Editor’s note: this is where playing with the sauces is more than appropriate. 😉
Redneck Roadkill was recommended and did not disappoint! House-made crispy potato chips piled high with chopped beef, queso, pico, avos, jalapeños, and a dab of sour cream. Heck yeah.
I thoroughly enjoyed washing it all down with UB’s Shrieking Eel juicy, floral, fruity IPA. Thumbs up!
Now onto dessert…kind of.

Most people are familiar with Uncle Billy’s beer and bites, but I’m not sure all are aware of the tasty vodka or bourbon based craft cocktails they concoct. They have 10 on tap, including Night Swim: vodka, grapefruit juice, hibiscus, and a hint of rose water. Delightful! A few things must be noted: 1.) Uncle Billy’s makes their own spirits – call them a “brewstillery” – and 2.) they use all fresh juices and house-made ingredients in the drinks.



Order their signature cocktails by the glass or build your own flight. [Full bar available] I had the privilege to try them all and I must state I was more than impressed. All were light, bright, and well-balanced. The Vimosa, made with pineapple OJ and coconut syrup, was a real standout. I go cuckoo for coconut even if ever so subtle. Yum!
Just in time for summer, Uncle Billy’s has made another batch of three of their canned craft cocktails: Leslie’s Cucumber Sipper (fresh cucumber juice and tonic), Lady Bird Lemonade (scratch-made lemonade with lavender water), and the aforementioned Vimosa (currently sold out, but more in production soon). The 12oz cans (12%abv) are perfect for simply relaxing at home, while playing poolside, adventures on the rivers and lakes, picnic in a park…and on and on. These “cocktails are ready to go without a trip to the farmer’s market and all the effort to mix them.” Fantastic chilled straight from the can or in your favorite vessel. What more can I say?
