Ingredients
116 ozcarton heavy whipping creamCOLD
114 oz can sweetened condensed milk
1tspube purple yam extract
1tbspvanilla extractOPTIONAL
Instructions
Pour COLD heavy whipping cream in a large mixing bowl. Using hand mixer (with a whisk attachment if you have one) and beat on high until medium peaks form (about five minutes).
Add sweetened condensed milk, ube extract, and vanilla (if desired; see note below*). GENTLY fold in until well combined. If you want a swirl look, fold until "marbled." CAUTION: Ube will stain...everything. NOTE: If you desire a darker purple color double the amount of ube extract. I tsp gives the ice cream a wonderful flavor. Also, the amount needed might vary depending on the concentration of the ube extract you have.
Place in a 3 pint container and smooth the top. Place plastic wrap directly on top of mixture. Snap plastic lid on top.
Put container in freezer and let set for at least 8 hours. If ice cream is too hard to scoop, allow to sit on counter for 15 minutes to soften.
Keeps in refrigerator for up to one month. Be sure to place plastic wrap back on top on ice cream before returning to freezer.
Notes
*Adding vanilla extract will make the ice cream softer to scoop straight out of the freezer because of the small alcohol content. The sweetened condensed milk already has a lot of vanilla flavor in it, so your choice! You can of course add any flavor(s) of your choice to create something even more amazing. BTW, coconut goes very well with ube. So good!
